Her career in the restaurant industry started in 2004 in Bellevue at JOEY and Bis On Main. She then moved across Lake Washington to join the teams at several iconic Seattle area restaurants. Over the years, she has amassed quite the culinary resume, working in the kitchens of respected figures like Tom Douglas and Ethan Stowell. Some of the Seattle restaurants where she gained experience include Cafe Presse, Osteria La Spiga, and Matt’s in the Market. She also worked at Tavolàta and Osteria La Spiga in Seattle.

A significant highlight of her career was becoming the first female Sous Chef at Canlis Restaurant, a notable achievement that demonstrates her skills and dedication after earning her stripes in the kitchen. Having learned from some of the best chefs in the city, Chef Sabrina decided to venture out on her own, leading to the birth of Swine Dining Catering.

Beyond her extensive restaurant work in the Pacific Northwest, Chef Sabrina has also traveled extensively throughout the United States and Europe, enriching her culinary knowledge. During her travels, she sought out authentic learning experiences, such as learning to make paella from a master in Valencia and tiramisù from an Italian nonna in Sicily. She has also staged (gained experience working briefly) at various award-winning restaurants across the U.S., including Eleven Madison Park in New York City, Blackbird and Next in Chicago, Husk in Charleston, and Quince in San Francisco, among others.

Chef Sabrina specializes in using local ingredients and has a love for cooking Mediterranean cuisine combined with PNW ingredients. However, her food often tells a broader story of her entire culinary journey. This narrative is derived from a blend of influences, including childhood memories of cooking with her Polish and Portuguese family, inspirational travels around the world, local food discoveries, and her own original ideas.
